Last night my ladyfriend came into the kitchen and said, “I wish we had brownies.”  I said, “I can make some!” and I did.  Of course I reached for Sweet Freedom and discovered that I had all the ingredients for a half-batch of the Ultra Fudgy Brownies… even half an avocado! which makes up some of the delightful fat in this relatively low-fat brownie.  Umm, I’ve mentioned before that I’ve never been a big chocolate fan, and therefore have little to no idea what a brownie should taste or feel like, but this really satisfied me and my lady (who claimed it was “like a really delicious low-fat brownie”)!  And really, could it get much sexier than that rich and decadent chocolate yumminess up there, with hardly any guilt?  For reals.  It’s inspiring me to use avocado more in baked goods.

I’ve also been perusing Ani Phyo’s new dessert book more in preparation for a review I’m working on for Domestic Affair.  Although most of the recipes don’t require a dehydrator (as in her first book), I wanted to try out this Breakfast Toast recipe, which does.  I’ve just finished the last piece today, having eaten it plain or as a raw “PB&J” with almond butter and fresh berries.  Does making a PB&J raw really require a recipe?  Probably not, but then I would never had tried out this tasty buckwheat, flax, sesame, raisin “bread”!  Here with some organic blueberries I got for free:

I’ve also slowly been materializing some recipes for the next zine, including one for Apple Cinnamon Quinoa Porridge.  It’s in need of a little tweaking, but super filling and tasty all the same.  I brought some leftovers to work the other day:

I’ve got another post with a recipe coming up later tonight, or perhaps tomorrow afternoon (I feel like a slacker compared to some of you daily mofo-ers!) for some Vegan Haggis Loaf I made today, topped with a sauce I made from Farmer’s Market ground cherries, red wine, and peppercorns.  I’d do it in this post, but I’m running out of time before I must dash off to my evening class about native tree species in Minnesota.  Therefore I leave you with a picture of Jes’s delicious Tempeh Tube Sausage patties which I made for brunch yesterday, along with steamed broccoli and roasted sunchokes… these are awesome and inspire me to concoct all sorts of tasty vegan burgers, including one which I will be bringing along on our camping trip up north this weekend (yes, I said up north, and yes, we are probably insane):

This morning I got up, went to the dehydrator, and pulled out a tray of Maple Cinnamon Buckwheat Crispies from Raw Food Real World.  (No, maple isn’t really raw…ooh, controversy!)  Then I sliced some apples, mixed them with a “syrup” out of dates, cinnamon, cardamom, lemon juice and coconut water, and topped them with the Crispies and little bit of chopped walnuts.  Voila!

I know it’s crazy, but I had a piece for breakfast, topped with some vanilla cashew cream that I’d made yesterday.  It was SO GOOD.

Since I heard we might be getting some snow, and at the very least a frost, this weekend, I’m trying to get the last harvesting out of my puny driveway container garden (we don’t have a yard).  One thing I grew this year was some brussels sprouts, and they were on the more successful end of things, though only one stalk in particular was adequately productive.

I knew it was the time to make some Mole-Roasted Cauliflower from my zine*, only using brussels sprouts instead!  My friend Jackie just sent me a message saying she loves this recipe, so I’m going to share it here for everyone.  These are zesty, flavorful, and delicious… if you’re spice-wary, reduce or omit the cayenne.  (Yes, there are still zines available!)

Mole-Roasted Cauliflower (or brussels sprouts)

1 large head cauliflower, broken into florets (or 1 lb.+ brussels sprouts)

1 tsp chili powder

1/2 tsp smoked paprika

1/8-1/4 tsp cayenne

1/2 tsp epazote or oregano

1 tsp sesame seeds

1/8 tsp cloves

1/4 tsp coriander

1/4 tsp cumin

2 tsp cocoa powder

2 cloves garlic, minced or pressed

3 tbp canola oil

1-2 tsp lime juice

salt and fresh ground black pepper to taste

chopped fresh cilantro to garnish

Preheat oven to 425F. In a medium mixing bowl, whisk together all ingredients except cauliflower and cilantro. Add cauliflower and toss well to coat, then place in a single layer in an oven-safe dish. Roast for 25-35 minutes until edges are crispy and browned, and sprinkle with chopped cilantro. Serve hot.

While the brussels sprouts were roasting, I cooked up some red quinoa that I topped with the last tomatoes from the garden:

And you know how I said in the quiz from yesterday that I was scared to work with mustard greens?  Well wouldn’t you know, today I got some in the CSA box, and I decided to go for it.  I sauteed some sliced garlic in olive oil, added the chopped mustard greens, and then drizzled the whole shebang in white balsamic, which is sweeter than it’s more common cousin.  The mustard-y flavor was subtle and lovely, and the balsamic balanced out the intensity that I’ve always feared.  Hooray for trying new greens!

In other news, I’ve been working on the new blog, and it’s tough work!  Getting more creative control is hard for me because I get crazy about all the choices I have.  I haven’t even begun to tackle reformatting image sizes since I have a larger layout.  Woof.  One day, though, it will be done.  Hope everyone is having a wonderful day, and I’ll see you back here tomorrow!

This will be my first year participating in VeganMoFo, and the third year of its existence.  Kittee over at Cake Maker to the Stars has the lowdown and HUGE list of this year’s participants, but basically it means I will be blogging every weekday (at least) for the month of October about vegan food, which is, obviously, my very favorite kind!  Expect lots of what-I-ate-today, recipes and ideas, new zine experiments, health-related and general rambling posts.  Also I’m planning a mini-series on green smoothies and how they’re my favorite thing, oh, EVER!  See?

I’m excited and a bit nervous, as I’ve never committed to blogging this much before, but I’m really hoping it will give me a big kick in the pants to get back to some regular blogging even after all is said and done.  How I will be able to live my life NOT in front of my computer in October is a bit of a daunting concept, but I’m going to try and find some balance.

Just in time for October, we’ve finally got some real fall weather here in Minnesota!  So tonight I made my first attempt at an idea I have for the zine #2: Balsamic Kale and Pecan Stuffed Sweet Potatoes.

It turned out pretty well, and my special ladyfriend approved, but I’m gonna see how a couple things can be switched up a little the next time I make it.  It seems that ideas for the new zine are centered around mini-obsessions with particular ingredients: ooh! sweet potatoes! or yum! pumpkin seeds! I hope that’s a good thing, and doesn’t end up being the how-many-dishes-can-she-make-with-the-same-three-ingredients-cookzine.  Well, it is just the start of figuring out some ideas, after all.

Also, sometime during the early part of VeganMoFo aka October, I’ll be moving this blog to a new domain, so fingers crossed that will go over smoothly.  I’ve noticed a lot of vegan people are moving to their own domains soon, which I think is pretty fancy and special!  This will help me clean out some old crap, get a little more organized, and have some more creative control over my little “internet baby.”  My good and talented friend Elliot is helping me out with all the technical stuff, so he deserves all the praise when it happens :-)   And lots of vegan treats, which he is kindly accepting in exchange for his work.

I’m up too late for my own good tonight, so I will leave things at that.  Hope you are all well, and getting ready for vegan food overload next month!

While I can’t speak to the specificity of Scottish strawberries, I’m a gal of Swedish roots who is known to proclaim the superiority of European strawberries to anything I’ve ever had in the U.S., and as for corn, I need say no more than fresh corn salsa and grilled corn on the cob!

It was so fun learning about everyone’s summer favorites, including some regional ones I’ve never had.  Tomatoes and corn definitely topped the veggie list (even though tomatoes are fruits, botanically-speaking, but most of us use ‘em as veggies!), while a tendency toward peaches and berries topped the fruit list.  Sometimes I feel like I have a new favorite every day, but lately I’m really digging peaches, too!  When you get a really good and ripe one, there’s really nothing like it – sweet and summery, perfect raw, alone or alongside some berries,  or tucked into a hearty and warm little scone fresh from the oven… And even though some people go crazy with their overabundant production, zucchini as raw pasta, a tasty and gluten-free replacement for lasagna noodles (whether raw or cooked), and shredded up for some nummy zucchini bread really is a lovely summer veggie.  Check back with me in a week or two though, and I’ll hopefully be proclaiming the succulent glory of my homegrown heirloom tomatoes eaten straight from the vine!

A Long Overdue Giveaway… For Two! July 23, 2009

While plowing through my blogroll over the past week or two, I was suddenly struck with the realization that I am a Big Blogger Idiot.  Somehow I never put two and two together, peddling my wee wares over here and coming across all sorts of food blog giveaways for products and cookbooks and toys over there… but I’ve never offered a giveaway of my own!

In part this is also a celebration, for I just got back from Kinko’s where I printed a second (and final) big batch of zines.  Back when I debuted this little project of mine in April, I didn’t know that I would be standing zine-less less than four months later.  Yep, that’s right – somehow the 200 copies from my first printing have all gone out into the world!  While most of them have made their way to safety within the U.S. to urban vegan meccas and small towns in small states alike and many to people in my own city (Minneapolis represent!), I’ve also gotten to trek down to the USPO with envelopes addressed to Canada, Europe, Australia… even the United Arab Emirates!

Once this second batch of 150 is sold, I’m not sure I’ll be doing any more printings, as I’m hard at work trying to come up with recipes for Zine no. 2 (zomg!) amidst testing for two cookbooks, working full-time, and (hopefully) soon taking on a second weekly volunteering shift.  So, even if you don’t win the giveaway, please feel free to contact me about ordering a zine (or more) before they’re gone for good.  (The procedure is the same as indicated at the end of this post.)

So, what’s all this talk of white bed sheets?  Well, as you can tell by the pictures I’m posting here, this food is surrounded by them.  I’ve never shot on a propless white background before, and it’s been a learning experience for me as part of a little side project I hope to tell you all about in the very near future.

As interesting as it is to play with light this way, I don’t know that I’d want to shoot dishes like this in the future (at least not for the blog).  I kinda like the contrast that you get from colored backgrounds and different textures, even if there is a way to make neutral on white look good (and I’m not saying I’ve necessarily done that!).  It’s been a stressful week, since these four sample images are the result of hours spent toiling in my friend’s kitchen while simultaneously cat-sitting.  And I’ve become sick again (with an added case of conjunctivitis aka pinkeye) on top of it all.

You may notice, that all of these dishes are raw.  I ate all of them after shooting them and they were pretty darn delish for being made off-the-cuff.  So with these esoteric clues at hand, can you guess what’s going on? ::put on your pensive looks::

Once I’m back in top-notch shape and things settle down a little more on the zine front, I hope to be back with a vengeance!  I’m excited to make new recipes now that spring is finally here, and all the little green shoots are making me so happy to be outside again (without freezing).  Rhubarb, anyone?

I’ve been experimenting with more raw foods, particularly since getting a copy of RAW: The UNcook Book by Juliano.  He’s kind of a kook!  But a lot of the recipes are really intriguing, and for some reason the bread recipes seem so much more approachable than in other raw books.  That could just be my mood or the time of year or the fact that I had my very first successful sprouting of oat groats and rye!  (Other times it hasn’t worked, or it’s gone off.)  I woke up early today to find little tails growing out of those suckers, and I’ve never been so happy at 7.30am before!

So a dehydrator day began in which raw oatmeal cookies, pumpernickel essene bread, and “garlic bread” went into my big black box.  The essene bread and the cookies aren’t quite done yet, but here’s a closeup of the garlic bread, which is thinly sliced jicama topped with a walnut-flax-garlic-bell pepper mixture:

They were garlicky and rich, and the jicama underwent a real transformation in the dehydrator, from crispy and crunchy to watery and soft to papery-delicate (almost like baked phyllo dough!).  I had a few alongside a Butternut Squash Soup (pictured above) from the same book that was spiced with curry, sweetened with mango and a few dates, and topped with sliced banana, more chopped mango, mint and jalapeno.  So good!  But also unusually like a spicy, liquid mango sorbet.  I’m excited for the leftovers tomorrow.

*Zine Update*  Above you see a variation on one of the recipes for the upcoming zine (Coconut Red Beans and Quinoa is the first version).

As you can tell by this being yet another post about “I’m working on it, don’t worry, it’s coming!” — I’m not very good at staying focused when I’m only dealing with my own deadline.  So, I’m making this public so all of you have to hold me to it!  I will finish drafting and laying out the zine by the end of February.  Then I will work on screenprinting the covers with my friend Dan during the first half of March and hopefully have them ready by mid-to-late March.  Sound like a plan?  I think so!

As it currently stands, there will be 13 to 15 recipes.  There are tons of cookbooks coming out soon that are far fancier than my little “art project” and people in the vegan blogosphere seem to be testing left and right!  So I’m gonna be sneaking a few extra recipes in that my poor, neglected testers probably won’t or can’t get to.  (And if you have made and given me feedback on any of the recipes in the past, expect to hear from me soon!)

So it’s been a while, compared to my earlier gusto this month.  Today I’m sitting inside after calling into work because I went through a procedure that’s made me extremely sun-sensitive and embarrassingly and painfully inflamed.  I don’t often talk about myself on my blog this personally, but as someone who struggles between trying to treat my health naturally and feeling pressured into the “quick fixes” of Western medicine, I am often left thinking about how my food choices affect my emotional and physical self, and whether I am making the right decisions sometimes about buying pills or supplements or paying a doctor to effectively put a band-aid on situations that I may have let get out of control for too long.

At times I feel I have an unhealthy relationship with this blog.  Well, maybe not unhealthy, but I find myself making and photographing food by myself in order to avoid the awkwardness of being the home cook/hostess and food blogger at the same time (although I claim to know very little about photography, the better pictures I take involve a lot of time!).  I put a personal pressure on myself sometimes to post the best, most unique, most decadent, newest etc etc creation or picture that I am capable of.  This isn’t my job though – I work a full-time job, I volunteer once a week, and I’m just a little vegan lady with no professional experience photographically or culinarily.  I’m not looking to be the vegan Martha Stewart.  Most importantly, this goes against the main reason I started cooking in the first place: being with and cooking with or for the people I love.  Maybe I’m feeling prematurely old, or veganism has changed the way I relate to my body, but I didn’t always pay attention to how healthy my cooking was(n’t), and lately my body feels like I’m slipping a lot in my eating habits.  I don’t use nutrition analysis software or anything to determine this, but I know I haven’t been doing my best to make cooking (and sometimes baking) a healthy activity in my life as well as a people-oriented one.

My partner and I have our own sets of health or emotional issues that conflict with wanting to feel total freedom in what we eat.  Sometimes it feels like we are constantly on opposite sides of a healthy-hedonistic spectrum – and neither of us is always the health-conscious and the other the hedonist.  Our roles change a lot.  Through our years of being together, though, we have influenced each other in positive ways: I’ve nearly erased any desire for boxed pre-seasoned couscous or chili mix and invited her into the amazing world of kale, and she has gotten me buying only whole grain breads and brown rice and reminding me to eat more fresh fruit.  My endeavors have not always been met with acceptance, though: my becoming vegan freaked her out a bit (she’s still a vegetarian, but rarely eats non-vegan things at home) and she still seems afraid that I’m “going to go raw on her” (no plans for that!).

So what all this blabber is about, if you’re still reading right now, is that I’m making a concerted effort to make healthier food for us and have her (and other people) be more a part of the process.  I know I’m not all cookies and white pasta and vegan mayo all the time anyway, but you’ll probably see less sweets from me here from now on, and hopefully more colorful and healthier recipes (as far as the colder winter months will allow).  There are a couple of exceptions of course (holiday dinners and birthdays), but for the most part, I’m going to reduce my sugar, wheat/gluten, alcohol, caffeine, and soy, and get down with the fresh fruits and veggies, beans and legumes, and seasonal produce.  All still with nice doses of spices and herbs, healthy fats, and tasty vitamins and minerals that I’ve been replacing with coffee and vegan muffins in lieu of breakfast and lunch.

Now, about the last part of my post.  For those of you who have been following this blog for awhile, you know that I’ve procrastinated a ridiculously long time on a cookzine I’ve been working on.  I wish I had more concrete answers than it’s still happening… Moving and some new direction halted things a bit.  I felt I was pressuring myself to do too much for a first-time zine, so I’m in the process of streamlining, and working on a couple different simple recipes (testers, be on the lookout!) in addition to typing it all up and designing it and printing it.  Completing semi-large projects has never been one of my strong suits, and the anticipation and fears about sharing it with other people is also a bit scary.  But it will get done, even if it’s been far too long since I first mentioned it.

In conclusion, healthy food=good and zine=happening.  And here is a lovely fall photo for those of you who don’t get to experience it (I grew up in San Diego, I know what I’m talking about):

Have you heard about the Vegan de Guadalupe zine?  If not, you should order it, posthaste; assuming, that is, that there are any copies left!  While skimming through it has inspired me to all sorts of Mexican bean goodness, this is the first actual recipe I’ve made.  Delicious!  Coconutty, banana-y, cinnamony goodness.  Some of the directions are a bit loose, so if you need rigid details, it might not be for you; but Hortencia quickly answered my email question about this recipe.  I baked it in a dish, but i imagine this could/should be made into little cookies (“galletas,” also, avena=oats and platano=bananas, in case your Spanish is as limited as mine).  I added dried blueberries because I dehydrated some last weekend, and it’s taking all my willpower not to have another piece before I take it to a potluck tonight.  Buy it!  Make something delicious and vegan and Mexican!  Stay tuned for more on that front…

…i haven’t (that doesn’t happen for another week). i went the slightly less healthy route and fried up some of my maple mustard chili tofu from the forthcoming zine in a cast iron pan for a good 10 minutes. the broccoli and rice make me feel less guilty. but the pleasure is all worth it!
