Ani Phyo’s Peach and Pistachio Cobbler July 29, 2009

See, I told you I’m loving peaches!  I bought a couple peaches specifically for this dessert, which I’ve been eyeing in my recently-acquired copy of Ani’s Raw Food Desserts.  So I whipped it up, sat down to read through my blogs, and what popped up immediately but her post of the recipe and a video for this very dish!  It has a lovely flavor from the vanilla-scented peaches combined with the date-sweetened pistachio “crust.”  I’ve possibly never used pistachios in raw food preparations before, but I’m so glad I just did!  This makes for a simple yet sophisticated dessert, with a surprisingly intriguing flavor in every bite.  I also topped it with some goji berries, because they’re pretty and I like them.

Oh, this looks delish. And it’s naturally gluten free. I’m definitely going to give this one a try. I wonder how it will be if I sub in strawberries for the peaches. Thanks!

Strawberries would be good, too, though I might use almonds instead of pistachios. Pistachios are such an under-utilized nut, it’s hard for me to imagine them paired with other fruits besides apricots and pistachios!

Are those little gojies that you placed on top!? Anyway, such a pretty photo you have here! I watched Ani’s video earlier today and I can’t believe how simple the recipe is — the end product looks really fancy, like it took a half day to prepare!

In an effort to discourage the fruit flies, I kept the peaches wrapped up in a bag and they ended up moldy on Monday! I was SO mad and sad. So these were peaches from the co-op.

Cobbler/Crisps are one of my favorite desserts because they mostly consist of FRUIT. That looks absolutely delicious.
