Vegan de Guadalupe: Galletas de Avena y Platano July 23, 2008

Have you heard about the Vegan de Guadalupe zine? If not, you should order it, posthaste; assuming, that is, that there are any copies left! While skimming through it has inspired me to all sorts of Mexican bean goodness, this is the first actual recipe I’ve made. Delicious! Coconutty, banana-y, cinnamony goodness. Some of the directions are a bit loose, so if you need rigid details, it might not be for you; but Hortencia quickly answered my email question about this recipe. I baked it in a dish, but i imagine this could/should be made into little cookies (“galletas,” also, avena=oats and platano=bananas, in case your Spanish is as limited as mine). I added dried blueberries because I dehydrated some last weekend, and it’s taking all my willpower not to have another piece before I take it to a potluck tonight. Buy it! Make something delicious and vegan and Mexican! Stay tuned for more on that front…
